Conference Dinner

We are pleased to confirm the Offshore Mariculture Mexico Conference will include a gala dinner on the 7th of March at the Riviera, a venue with a rich cultural history in the heart of Ensenada. It will provide the perfect platform for networking and continuing discussions with speakers, delegates, sponsors and supporters before presentations continue at the Ensenada Centre of the Arts in Baja California.

The Riviera started out in 1930 as a luxurious casino, hotel, restaurant and bar in Ensenada called the 'Playa Ensenada Hotel & Casino'. Now, after being derelict for 40 years, it has undergone a restoration process that started in the 80s and is now the Social, Civic and Cultural Center of Ensenada. Currently the building is used for conventions and for social and cultural events. 

This year, Chef Giannina Gavaldon will be impressing attendees with her delicious menu featuring locally sourced cuisine. She began her culinary studies at CSCA Le Cordon Bleu in Los Angeles, California, in 2007. 

For Giannina, who is passionate about Mexican culture and its wines, Ensenada is a noble land where the quality of the products she uses is unparalleled; fish, shellfish , vegetables, wines and cheeses. For this reason she has worked in several local establishments; the Hotel Punta Morro, and the Manzanilla and Muelle Tres restaurants. 

In 2010 she had the opportunity to work at the Cannes Film Festival in France, as the director of private dinners for directors and artists from around the world. Thanks to the experience she gained, she was appointed as chef at Vitis Bistro in Monte Xanic, Valle de Guadalupe.

She started her catering company in Tijuana, her hometown, where her passion continues to revolve around satisfying the tastes of the most demanding palates. In June 2014 the Olivia el Asador del Porvenir restaurant opened its doors as a place where the diner can enjoy the best local ingredients and wines in an unparalleled outdoor environment.
